Chicken Curry Salad

Chicken Curry Salad

Serving Size: 8

Ingredients:

2 pounds cooked chicken, shredded
1/2 cup pineapple, chopped
1/2 cup roasted cashews
1/2 cup green onions
1/2 cup celery, chopped
1/2 cup raisins
1/2 cup red or green pepper, chopped
1/2 cup apple, chopped
1/2 cup grapes
1/2 cup  shredded unsweetened coconut
1  tablespoon curry powder
(null) boiling water
1/2 cup whipping cream
2 1/2  tablespoons chutney
3/4 cup mayonnaise
tabasco sauce
salt & pepper to taste

Directions:

Dissolve curry in water to form a thick paste.
Add in other dressing ingredients and mix together with all salad ingredients.
Refrigerate until ready to serve.
**After apple is chopped, mix into lemon juice to avoid browning.**
